A blend based around a garlic and bay leaf core with some warmth from Turkish pepper and a little chilli. Best made with red wine added into the mix. This sausage seasoning can also be used as a hamburger seasoning.

Best paired with:

  • Venison, Goat, Beef or Duck

Size:

  • 225g satchel for 5kg of meat (45g to 1kg of meat)

What You Need:

  • 4kg Venison, Goat, Beef or Duck.
  • 1kg Pork (approximately 40% fat)
  • 500ml Red Wine
  • 1pk Carnivore Collective Wild Game Sausage Mix

Method:

  • Mince meat with a medium plate
  • Combine spices, wine and water with meat
  • Mix thoroughly, kneading the meat until it is sticky
  • Fill chosen casings

  • Salt, Rice Flour, Garlic, Soy, Chilli, Onion, Pepper, Bay, Celery.
