With a base of smoked paprika, smoked salt, chilli, and garlic, this aromatic blend perfectly captures Spain's signature sausage. For maximum flavour complexity you can cold smoke your chorizo before cooking. This sausage seasoning can also be used as a hamburger seasoning.

  • Pork and Beef

Size:

  • 225g satchel for 5kg of meat (45g to 1kg of meat)

What You Need:

  • 5kg Pork (approximately 30% fat)
  • 250ml White Wine (Chardonnay or Riesling), (optional: replace with water, if preferred)
  • 250ml water, chilled
  • 1pk Carnivore Collective Chorizo Sausage Mix

Method:

  • Mince meat with a medium plate
  • Combine spices, wine and water with meat
  • Mix thoroughly, kneading the meat until it is sticky
  • Fill chosen casings
